Big girls don’t cry….unless they are cutting onions then we cry like crazy. Don’t even think about rubbing your eyes either, lessons my military friends know all too well. Onions are high in vitamin C and it’s cold and flu season, means I need to eat all I can. The great thing about cooking with ground beef you can mix a ton of chopped up veggies and it all mixes well together. I spend almost all of my spare time training in martial arts and fitness. I don’t want to cancel out all that hard work with a bad diet. Balanced nutrition is a huge key to success. Not to mention meal prep is a great way to save money on groceries and eating out. I made two types of meals this week: a Spaghetti bowl and a Mediterranean bowl. However, I modified the original recipes. In these recipes I had 1 pound of ground beef, 2 diced celery sticks, 2 diced carrot sticks, 1/2 diced onion, 5-6 diced garlic cloves. Cooked everything together until the meat was brown and cooked. Then added spaghetti sauce or southwest salsa as a finish. I often add feta cheese, mozzarella, or black olives on top for extra flavor.
