This dish is higher in carbs due to the sauce so I don’t make it very often, but it is soooo delicious. It’s a pound of grilled chicken, broccoli, peas, and equal amounts Alfredo and spaghetti sauce. One of my favorite combinations. This makes four meals for me. The great thing about mixing vegetables in I have everything in one container. I don’t have to pack and extra container for a side.
The original recipe had mushrooms and pasta added to it. Personally I’m not a fan of mushrooms so I don’t usually add them. I also tend to do low carbs as best I can, so no yummy pasta for me (sad panda). If you want to get really fancy put the entire dish in a baking pan, add some shredded Mozzarella cheese, and bake on 350 for 20-30 minutes. It gives then entire dish a nice finish with a melted cheesy crust.
