Blooming Potato

I call this “Blooming Potato.” Getting down with my, not really, Irish roots. I used one yellow, golden delicious potato. The yellow ones are softer and taste like butter when you cook them, so good. Once the potato was baked I sliced it and spread it out in a circle. Then added slices of turkey breast and mozzarella cheese. Heated in the microwave to melt the cheese and make everything gooey. Debating about adding salsa or my favorite ranch dressing. A simple, warm, and hardy meal to eat as there is a raging snow storm happening outside. Gonna get all snuggled down, eat a warm meal, and practice martial arts. Can’t think of a better way to wait out this storm.
